Simple Summerhouse Smoothie – Healthy getaway recipe

Danish summers are the best! Right now the weather is amazing and you kind of think it will never change. But Danish summers can be tricky, and you never know if this will continue for a few months, or if the next 2 days will be all the summer we get this year. Needless to say, you have to enjoy it while it lasts. Luckily my family’s summerhouse isn’t more than a 45 minute drive away, so me and 2 girlfriends decided to take a spontaneous 20 hour getaway to Tisvilde.
I picked up the girls in the afternoon, when I was done teaching my classes at Senses. Then we drove straight to Tisvilde and ran to the beach! The water temperature was perfect for cooling down, and the sun was still doing it’s job at keeping us warm and dry ashore.
Dinner was summerly, simple and delicious. Quinoa salad, carrot sticks, hummus and baked salmon. Afterwards we played Uno, ate chocolate and battled mosquitos the rest of the night. Uno might be the most underestimated game ever! And in the honor of the incredible game, we created a playlist with songs including UNO in the lyrics only. In the morning we wanted an easy and healthy smoothie, before driving back. I’d brought my blender, some raw cacao powder and 4 ripe bananas. I put the bananas in the freezer when we got there (see how here). And we had bought some frozen spinach and some chia seeds when shopping for dinner the day before. That was all we needed for a simple and healthy smoothie. The spinach, cacao and chia seeds can stay in the summerhouse for the rest of the season, then I don’t need to bring that many ingredients when craving a smoothie.
SIMPLE SMOOTHIE SUMMERHOUSE EDITION:
Recipe for 1 person
- 1 frozen banana
- 2 clods frozen spinach (they came in clods in the bag)
- 1 tablespoon cacao powder
- 1 tablespoon chia seeds

The smoothie was enjoyed while playing yet another game of Uno and listening to our lovely playlist. Then we packed up and drove back to Copenhagen. We all had some stuff to do, but 20 hours away had been pure bliss, except for the spiders! #thestrugglewasreal
